One day while perusing cooking blogs looking for interesting breakfast ideas I stumbled upon the single lady pancake from joy the baker. I often come across recipes that sound really good but aren’t that healthy so they should probably be made rarely and maybe even saved for a special occasion. Well I’m not that patient of a person so I would rather make changes to decrease the calories and or fat in the recipe and eat it any time the feeling strikes. Also, there is no way I could get away with making pancakes for myself and no one else so this recipe makes 2 servings.
In a bowl whisk together applesauce, vanilla extract and milk, add the dry ingredients and stir to combine. The mixture will be thicker than normal pancakes so don’t be alarmed if it looks more like muffin batter than pancakes. Mix in the chocolate chips and half of the banana slices.
Heat a small frying pan and coat with cooking oil spray. I used the 1/3 cup measure that I already used to scoop and measure the batter to make for even pancakes, make sure to spread the pancake batter around and spread some with the back of a spoon to even it out and ensure consistent cooking. Cook over medium heat until bubbles form and pop on the surface of the pancake and flip, cooking for another minute or so. Place two pancakes on each plate (this recipe makes 4 pancakes) and top with the remaining banana slices, toasted nuts and syrup.
